    Here is the recipe I got off a REALLY REALLY OLD HEINZ Vinegar Bottle in my Grandmas basement
    I love them But the wife or other ppl dont like to be around me after I eat them.

    2 cup Vinegar
    2 tea spoon mustard
    1/2 cup water
    1 cup suger
    1 table spoon salt
    celery seed
    musterd seed
    6 cloves crushed garlic
    2 sliced onions

    Simmer it all together and pour it in with the eggs and let it sit for a few days in the fridge. The longer the better they get!

    I'm going to try to pickle some eggs this weekend. They sound delicious. Eggs are high in protein and fairly cheap. If I get it right, my pantry will have an abundance of them.

    A friend of mine pickled them with beets and onions. Pink eggs are weird, but man they tasted great!

    I pickled 3 pints to see how they would turn out. I tried several different kinds. One with garlic and onions. The other ones with peppers. It seems that I could have used more spices but other than that they were very good and all gone already.


    Further research dictates that pickled eggs are not safe to leave unrefrigerated even if canned.
    It is a bummer but it wont' stop me from making them cause they are just too darn good. Just have to make room in the fridge is all.

    I don't know where you got your information about shelf life, but I have had them after 2 years un-refigerated. I havent got sick from it, I'm still here.

    Some say you can leave them un-refriderated and some say not to due to botulism. I don't know so I will lean to the side of caution. You are clearly more experienced with canning so It works for you. Until I get more experience canning mine are staying in the fridge.
