    Default Pickled Eggs


    I pickle my own eggs. I usually pickle about 5 dozen eggs a year but I am thinking about doubeling down.

    Pickled eggs are high in Protein and I have had them 2-3 years after canning them.

    Here is my recipe;

    Sanitize your jars.

    Boil eggs hard then peel them.
    Fill your jar with eggs adding peppers as you go. Red Chili is best. (My opinion)
    I usually put at least 3 peppers for a dozen eggs.
    Add 1 heaping tablespoon of pickling salt
    Fill jar about 1/4 inch from top with white vinegar.
    Seal lids hand tight.
    Place in large stock pot filled til it just cover the top of the jar.
    Bring to a rolling boil for 15 mins.
    Carefully remove the jars and place them on a towel.
    Do not move the jars for at least 12 hours.
    Check to make sure the jars are sealed, the lid should not have any play in it. If the lids arent sealed put the jar into the refidgerator, eat these first.

    I made some with jalepenos and onions a couple months ago. I would tell you how long they stay good, but I ate them....... All of them in about a week. Other than gassing my wife to death it worked out pretty well.

    I cook with cayenne, I think a little in everything is just a great way to wake up flavors. But I love to pickle jalepenos. Toooooo yummy.

    I pickle Jalopenos also, I added some Habenros last time. I will NEVER do that again!!!

    One batch I made had baby carots and onions. I will definately do that again, it was awesome.

    Onions are my favorite thing in a pickle mix truthfully. I eat a lot of peppers, but habeneros????
    No thank you!!!! I would have loved to see your face when you bit into the first one. Did you do them whole or sliced?

    I did them whole, ate one. It took my breath away quite litteraly. I drank a whole gallon of milk but it only helped while the milk was in my mouth. My son was laughing so hard he couldnt breath either. I WILL NEVER DO THAT AGAIN!!!

    Hard candy is the best best best way to kill heat!

    Milk will coat the mouth, but it coats over the pepper oils that are already on your tongue.
    Water can dilute the pepper oils, but also seems to spread them around the whole mouth.

    But I think it is like not being able to feel pain in more than one part of your body....
    If your taste sensors are processing sweet, then they shut off feeling heat maybe?????

    But candy is the way to take the edge off. Funny stuff!!!! Thanks for sharing!!!

    I'll try to remember to bring you a jar next time. I still have that jar of sliced jalopenos sitting on my kitchen table.
