    Default country hams


    Any one out there know how long a country ham will keep and what is the best way to store them . I have 10 hanging in my garage it is about 72 ' in there most of the year a bit colder in fall winter say 62' and low humidity .Thanks for any info you can give me on this .

    Thanks for the link! I love country hams! Now I know where to get one for our Christmas dinner!

    I went to the USDA web site But I dont think I agree with them . They say 1-4 months but I know it is longer than that we normaly get a few hams at Christmas time and have used some in the fall of the next year and no spolage . An old farmer told me that when he was a boy his parents use to kill hogs in November and cure up enough ham and bacon to last the whole year .

    if your ham is cured it will last as long as your hound dog licks its ass...
    cured ham will last forever, if its cured right. we have a ham from last year that we cured, along with 40# of bacon. curing meat is a lost trade. the whole point in curing meat is preservation. i would not pay any attention to the USDA bs... figure it out on your own...folks made it just fine for generations without the pig goverment telling them how to preserve meat...its not hard. actually its very easy. this country was founded and discovered with preserved meats. native americans made it just fine without the USDA or the FDA, so can you... point is...educate yourself about these things and ignore anyone that throws the 'pig goverment regulations' in your face... no one needs them...
    thats my opinion...

    I talked to the butcher at the farmers market, they sell country hams all the time. he said they will last a couple of years if kept cool, dry place. he said that you will have mold on the outside which is ok. You would need to scrub that off and then soak the ham, but if you have mold on the inside then it is no good. this is one you just have to play by ear and know of a good way to store it.
