I thought it might be fun to share some recipes…It`s that time of year when we are getting so much out of gardens (Except of me) LOL that I thought it would be fun for us to share some recipes
Butternut Squash soup
3 pounds of butternut squash
1 each medium onion
6 cups of chicken stock/ or vegetable stock
1/8 tsp chopped garlic
1/8 tsp of thyme leaves
2 bay leaves
Salt & pepper to taste
1 table spoon of sour cream
1 table spoon of olive oil
1 cup of spiced rum
Pre heat oven to 350 degrees
Cut the squash in half take out seeds, put squash on a sheet pan, skin side up and roast for a little over an hour.
While the squash is roasting, dice onion, then sauté onion in olive oil with your chopped garlic, thyme and bay leaves. Add chicken stock and bring to a simmer.
By now your squash should be done. Take the skin off the squash, discard the skin. Add the squash to the chicken stock simmer for 10 mins then puree the squash with the other ingredients, add spiced rum and simmer for another 5 mins.
Just before you serve the soup add a little sour cream to the top of each bowl.
The spiced rum is not necessary, but it sure dose give it a nice finishing touch
